Dining by rail comes in three shapes. On a multi-night luxury train the restaurant car is part of an inclusive fare. In Japan a dining train is usually an ordinary reserved service with a booked meal plan, priced separately from the seat. A wine or lunch excursion is a short return trip where the food is the whole product.

Menus and meal plans change by season and are quoted per departure, so each page records the operator's own booking route and published season rather than a fixed price.
